Experience how traditional Japanese food comes together with local ingredients and flavors with chefs from 84 Yesler and Sushi Kashiba.

On UNESCO's Intangible Cultural Heritage list since 2013 - Washoku is defined as traditional Japanese cuisine. In celebrating the Centennial Anniversary of the Japan-America Society of the State of Washington, this special Celebrate WASHOKU Series explores contemporary Northwest seafood cooking inspired by Japanese Washoku flavors with chef Christina Siegl of 84 Yesler and dives deeper into traditional Japanese food with Chef Shiro Kashiba and his son, Ed Kashiba, Managing Director of Sushi Kashiba. Enjoy wine tastings from Matthews Winery with your Fran's Chocolate dessert served on Heiando lacquerware for you to take home in an enjoyable experience of tradition and next generational creativity!

Sushi Kashiba
 Chef Shiro Kashiba & Managing Director Ed Kashiba

Award-winning chef, Shiro Kashiba, and his son Ed Kashiba of Sushi Kashiba prepare traditional Japanese appetizers for this event. Later, Shiro talks about the tradition of Japanese food. Shiro's restaurants are raved about in SeattleMet, Conde Nast Traveler, bon appetit, and more - this will be an event you won't want to miss!


84 Yesler
Chef Christina Siegl & Owner Sam Takahashi

Michelin-trained chef Christina Siegl of 84 Yesler, who recently won third place in the North American Regional Qualifying Tournament for Washoku World Challenge, will be preparing contemporary Northwest seafood cooking inspired by Japanese Washoku flavors. Owner of 84 Yesler, Sam Takahashi, talks about the culture of "Gochisousama" after the meal.
